Irish Shepherd's Pie

1 lb. cooked lean ground beef
1 lg. potato, cubed and cooked
1 c. cooked whole kernel corn
1 c. cooked peas
1 c. diced cooked carrots
3 green onions, sliced
1 clove garlic, minced
1 tsp. black pepper
2 c. prepared brown gravy
3 c. cooked and mashed potatoes
1/2 c. finely shredded Irish cheddar cheese
In
a large bowl, combine ground beef, potatoes, peas, carrots,
green onions, garlic, black pepper and brown gravy.
Spray
9-inch deep dish pie plate or casserole dish; fill with
mixture. Spoon mashed potatoes around outside edge
of pie,
leaving an opening in the center for steam to escape.
Sprinkle potatoes with shredded cheese. Bake 30 minutes
at 350F or until
cheese is golden brown and meat mixture is bubbly.
Yield: 4 to 6 servings.

Semi-homemade Pasta Sauce

2 Tablespoons extra
virgin olive oil
1 Pound lean ground beef or sweet Italian sausage
1 Medium onion, chopped
1 Medium green pepper, chopped
1 Clove garlic, minced
1 Large jar plain spaghetti sauce
1 16 ounce can diced tomatoes
1 Small can tomato paste
4 Teaspoons dried oregano
1/4 Cup packed brown sugar
Salt & pepper to taste
On
medium heat, brown the meat in an extra large skillet or
sauce pan with the olive oil; drain. Add onion, green
pepper and garlic; cook until soft.
Stir
in spaghetti sauce, diced tomatoes, tomato paste, oregano,
brown sugar and
salt & pepper
until well blended.
Reduce
heat to low and simmer for 30 minutes. Serve with your
favorite pasta.

Lasagna Roll-Ups

Recipe
Semi-homemade Pasta Sauce
15 Strips of Lasagna, cooked and cooled
Filling:
3 Cups Ricotta cheese
3 Cups grated Mozzarella cheese
1 Cup grated Parmesan cheese
2 Large eggs
1 Tablespoon parsley flakes
1/2 Teaspoon pepper
1/2 Teaspoon salt
Extra Parmesan cheese for sprinkling on top
Oven
350
In
a large bowl, combine all ingredients until well blended.
Spray 13 x 9 inch baking pan with cooking spray and coat
the bottom with sauce. Spread about 3 tablespoons of
filling on 1 lasagna noodle. Roll up the lasagna and
place in baking pan, seam down; repeat until you have
filled the pan with 3 rows of 5 roll-ups. Cover completely
with sauce and sprinkle with more Parmesan cheese. Place
pan in the oven on a cookie sheet and cook at 350 for
30 minutes. Yield: 12 Roll-Ups

Sweet & Sauerkraut
Pork

1 1/2
Pounds Lean Boneless Pork Cutlets
1 Medium Onion, Chopped
1 Large Can Sauerkraut
1 Medium Jar Applesauce
1/4 Cup Packed Brown Sugar
Salt & Pepper To Taste
In
an extra large skillet or Dutch oven sauté the
onion and brown the pork. Add sauerkraut, applesauce, brown
sugar, salt and pepper.
Simmer
for 1 hour. Serve with mashed potatoes and pumpernickel
bread.
