Cashel Blue Cheese

Cashel Blue is a semi-soft blue cows’ milk cheese. It is unique, as it is Ireland’s first farmhouse blue cheese. It is all made on the dairy farm of Jane and Louis Grubb in Cashel Co. Tipperary Ireland. While some milk is purchased, the majority of the milk comes from the pedigree Friesian dairy herd on the farm. The cheese is made from pasteurised whole milk. The cheese has proved to be a versatile cheese with many culinary uses as it is slightly creamier, softer and has a lower salt content than some blue cheeses. Boilie Goat Cheese Plastic Cup

Boilie Cheese is hand made at Ryefield Farm. Where the finest milk produced in the rolling hills and lakes of Irelands is taken each morning to create one of the most highly acclaimed cheeses currently produced in Ireland. Boilie Cheese is produced by combining some of the oldest cheese production methods with modern techniques to produce a cheese which has a character all of its' own. The goat's milk is first pasteurized using a slow heating process. The cheese is then set in small vats. The curd is then left to drain in muslin bags (The background of this page is made from an actual muslin cloth of the type we use in cheese production). The curd is then salted, formed into orbs and packed in a plastic cup with sunflower oil, herbs and garlic. This method of packing gives the cheese and exceptionally long shelf life without the use of preservatives. Boilie Cheese is ideal for snakes and starters as well as an unusual addition to any chessboard. Try Boilie tossed into a salad using a little of the flavored oil as a dressing. Scoop out the center from some halved tomatoes and pop a ball of Boilie cheese into the hollow. Drizzle a little oil over the top and grill for a few minutes at a high heat.
